Instructions
In a large bowl, combine the cottage cheese and eggs, whisking until smooth and well blended.
In a separate bowl, mix together the whole wheat flour, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until a dough begins to form.
Add the olive oil and fresh herbs, mixing until all ingredients are fully combined.
Lightly flour a clean kitchen surface and knead the dough for about 1-2 minutes until smooth.
Divide the dough into four equal portions, rolling each portion out into a flat round shape about 1/4 inch thick.
Heat a non-stick skillet over medium heat. Cook each flatbread for about 2-3 minutes on each side or until golden brown and cooked through.
Remove flatbreads from the skillet and let cool briefly.
