1 pound ground beef

4 slices of beef bacon

1 medium onion, chopped

1 bell pepper (any color), chopped

1 cup shredded cheddar cheese

4 hoagie rolls

2 tablespoons mayonnaise

1 tablespoon ketchup

1 teaspoon garlic powder

Salt and pepper to taste

Fresh lettuce and sliced tomatoes for garnish

Optional: hot sauce for extra kick

Instructions
 

In a large skillet over medium heat, cook the beef bacon slices until crispy. Remove from the skillet and set aside, keeping the bacon fat in the pan.

    In the same skillet, add the chopped onion and bell pepper. Sauté in the bacon fat for about 3-4 minutes or until softened.

      Push the vegetables to one side of the skillet and add the ground beef to the other side. Season the beef with garlic powder, salt, and pepper. Cook until the beef is browned, breaking it apart with a spatula, about 6-8 minutes.

        Once the beef is cooked, combine it with the sautéed onions and peppers, stirring together. Sprinkle the shredded cheese over the mixture, allowing it to melt slightly in the heat of the pan, about 1-2 minutes.

          Meanwhile, lightly toast the hoagie rolls on a separate pan or under a broiler until golden brown.

            Assemble the sandwiches by spreading mayonnaise and ketchup inside each hoagie roll. Fill the rolls generously with the chopped cheese and beef mixture.

              Top each sandwich with beef bacon slices, and add fresh lettuce and sliced tomatoes. If desired, drizzle with hot sauce for an extra kick.

                Close the sandwiches and serve immediately while warm, ensuring the gooey cheese is still melty.
