8 small flour tortillas

4 large eggs

1 cup cooked chorizo or breakfast sausage, crumbled

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup diced bell peppers (any color)

1/4 cup diced onions

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Cooking spray or olive oil for brushing

Fresh cilantro for garnish (optional)

Salsa or guacamole for dipping

Prepare the Filling: In a skillet over medium heat, scramble the eggs until just set, about 3-4 minutes. Add the cooked chorizo (or sausage), bell peppers, onions, garlic powder, paprika, salt, and pepper. Stir everything together and cook for an additional 2-3 minutes until the veggies soften slightly. Remove from heat and let cool for a few minutes.

    Assemble the Taquitos: Lay out one tortilla on a flat surface. Place about 2-3 tablespoons of the egg filling in a line down the center. Sprinkle with a tablespoon of shredded cheese. Roll the tortilla tightly from one end to the other, securing the filling inside. Repeat this process for all tortillas.

      Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 3-5 minutes, if your model requires it.

        Brush with Oil: Lightly spray or brush the outside of each taquito with cooking spray or olive oil to promote a crispy texture.

          Air Fry the Taquitos: Place the taquitos seam-side down in the air fryer basket. Make sure not to overcrowd the basket – depending on the size, you may need to do this in batches. Air fry for 8-10 minutes, turning halfway through, until they are golden brown and crispy.

            Serve: Once finished, remove the taquitos from the air fryer and let them cool for a minute. Garnish with fresh cilantro if desired and serve with your choice of salsa or guacamole for dipping.
