Ingredients

2 pounds ripe tomatoes, halved

1 medium onion, chopped

4 cloves garlic, peeled

1 tablespoon olive oil

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

2 cups vegetable broth

1 tablespoon balsamic vinegar

Fresh basil leaves for garnish (optional)

Croutons for serving (optional)

Instructions

Preheat your air fryer to 400°F (200°C).

In a large bowl, combine the halved tomatoes, chopped onion, garlic cloves, and olive oil. Sprinkle with dried basil, oregano, salt, and pepper. Toss until everything is well coated.

Place the tomato mixture in the air fryer basket in a single layer. Cook for 15-20 minutes, shaking the basket halfway through, until the tomatoes are caramelized and tender.

Remove the roasted vegetables from the air fryer and allow to cool slightly.

In a blender, combine the roasted tomatoes, onion, and garlic with the vegetable broth and balsamic vinegar. Blend until smooth and creamy. You can adjust the thickness by adding more broth if desired.

Pour the soup into a saucepan and heat over medium heat until warmed through. Taste and adjust seasoning as necessary.

Serve hot, garnished with fresh basil leaves and croutons if desired.
