Ingredients

2 cups almond flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 cup coconut oil, melted (can substitute with unsalted butter)

1/4 cup honey or maple syrup

1 large egg

1 teaspoon vanilla extract

1 cup dark chocolate chips (dairy-free if preferred)

Optional: 1/2 cup chopped nuts (walnuts or pecans) for added texture

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a mixing bowl, whisk together the almond flour, baking soda, and salt until well combined.

Combine Wet Ingredients: In another bowl, combine the melted coconut oil, honey (or maple syrup), egg, and vanilla extract. Mix until the mixture is smooth and creamy.

Combine Wet and Dry: Gradually add the dry mixture into the wet mixture. Stir until a dough forms. Make sure there are no dry patches.

Fold in Chocolate Chips: Gently fold in the dark chocolate chips and chopped nuts (if using) into the dough until evenly distributed.

Shape Cookies: Using a tablespoon or cookie scoop, drop mounds of dough onto the prepared baking sheet, leaving space between each cookie as they will spread slightly.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown but the centers still look slightly soft.

Cool: Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: About 12 cookies

                    - Presentation Tips: Serve the cookies on a decorative plate and sprinkle with a pinch of sea salt for an elegant touch. Pair with a glass of almond milk or a cup of tea for a delightful afternoon treat!
