Amish Potato Stuffing

4 large russet potatoes, peeled and cubed

1 loaf of stale white bread, cut into cubes

1 medium onion, finely chopped

2 stalks of celery, finely chopped

1 carrot, grated

1 cup chicken or vegetable broth

1 teaspoon dried sage

1 teaspoon dried thyme

1 teaspoon garlic powder

½ teaspoon salt (or to taste)

½ teaspoon black pepper (or to taste)

2 tablespoons unsalted butter, melted

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: In a large pot, bring salted water to a boil and add the cubed potatoes. Cook until fork-tender, about 15 minutes. Drain and return to the pot. Mash until smooth and set aside to cool slightly.

    Sauté Aromatics: In a skillet over medium heat, add the melted butter. Once melted, add the chopped onion, celery, and grated carrot. Sauté until the vegetables are soft and translucent, about 5-7 minutes.

      Combine Ingredients: In a large mixing bowl, add the mashed potatoes, sautéed vegetables, dried sage, thyme, garlic powder, salt, and pepper. Stir until well combined.

        Add Bread and Broth: Gently fold in the bread cubes. Then pour the chicken or vegetable broth over the mixture and combine thoroughly until everything is evenly moistened.

          Bake the Stuffing: Preheat your oven to 350°F (175°C). Pour the stuffing mixture into a greased 9x13 inch baking dish, spreading it out evenly.

            Bake: Cover the dish with aluminum foil and bake for 30 minutes. Then remove the foil and bake for an additional 15-20 minutes, until the top is golden brown and crispy.

              Serve: Remove from the oven and let cool slightly before serving. Garnish with chopped parsley for a fresh touch.
