Angel Food Cake Churro Bites

Ingredients
  

1 cup egg whites (approximately 8-10 large eggs)

1 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon almond extract

1 cup cake flour, sifted

1/2 teaspoon cream of tartar

Vegetable oil for frying

1/2 cup cinnamon sugar (1/4 cup sugar mixed with 1 tablespoon ground cinnamon)

Instructions
 

In a large mixing bowl, beat the egg whites with an electric mixer on medium speed.

    Gradually add the cream of tartar and continue to beat until soft peaks form.

      Slowly add the granulated sugar, approximately 2 tablespoons at a time, and beat until the mixture forms stiff peaks and is glossy.

        Mix in the vanilla and almond extracts.

          Gently fold in the sifted cake flour a little at a time using a rubber spatula, making sure to maintain the fluffiness of the egg whites.

            Prepare a piping bag fitted with a star tip (like Wilton 1M) and fill it with the angel food cake batter.

              Preheat the vegetable oil in a deep pan or deep fryer to 350°F (175°C).

                Pipe small star-shaped bites directly into the hot oil, cutting each one to the desired size with a pair of scissors (about 2 inches long).

                  Fry the bites in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown.

                    Remove the churro bites from the oil and drain on paper towels.

                      While still warm, immediately toss the churro bites in cinnamon sugar until fully coated.

                        Serve warm and enjoy the light, fluffy, and slightly crispy outside!
