Ingredients

2 large apples, peeled, cored, and diced (preferably Granny Smith)

1 cup granulated sugar

1/2 cup brown sugar

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 cup unsalted butter, softened

3 large eggs

1 teaspoon vanilla extract

8 oz cream cheese, softened

1/4 cup powdered sugar

1 tablespoon lemon juice

Optional: Chopped nuts for topping

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.

Prepare the Filling: In a medium bowl, beat the softened cream cheese with powdered sugar and lemon juice until smooth. Set aside.

Mix the Dry Ingredients: In a separate large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg.

Cream the Butter and Sugars: In another bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).

Add Eggs and Vanilla: Beat in the eggs, one at a time, and then mix in the vanilla extract until combined.

Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.

Fold in the Apples: Gently fold in the diced apples until evenly distributed throughout the batter.

Assemble the Cake: Pour half of the batter into the prepared cake pan. Spread the cream cheese filling over the batter. Top with the remaining batter. Optionally, sprinkle chopped nuts on top for added crunch.

Bake: Bake in the preheated oven for 40-50 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, cover it loosely with aluminum foil.

Cool and Serve: Allow the cake to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely. Optionally, dust with powdered sugar before serving.

                      Prep Time: 20 minutes | Total Time: 1 hour | Servings: 8-10

                        - Presentation Tips: Serve slices on rustic wooden plates, dusted with powdered sugar, alongside a warm cup of coffee for a delightful brunch experience. Consider adding a dollop of whipped cream or a scoop of vanilla ice cream on the side for added indulgence!
