1.5 lbs (680g) beef chuck, cut into 1-inch cubes

2 tablespoons vegetable oil

2 large onions, finely chopped

2 cloves garlic, minced

2 tablespoons paprika (preferably sweet Hungarian)

1 teaspoon caraway seeds

1 teaspoon dried thyme

2 large bell peppers (red or yellow), chopped

4 medium potatoes, peeled and diced

4 cups beef broth (or stock)

2 tablespoons tomato paste

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef cubes in batches, ensuring not to crowd the pot. Sear on all sides until browned, about 5-7 minutes, then remove the beef and set aside.

    Cook the Onions and Garlic: In the same pot, add the chopped onions and sauté for 5-6 minutes until they are translucent. Add the minced garlic and cook for an additional minute until fragrant.

      Add Spices: Stir in the paprika, caraway seeds, and thyme. Cook for about 1 minute to toast the spices and enhance their flavors.

        Combine Ingredients: Return the browned beef to the pot, then add the chopped bell peppers, diced potatoes, tomato paste, and beef broth. Bring the mixture to a boil.

          Simmer: Once boiling, reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours. Stir occasionally until the beef is tender and the flavors meld together. If the goulash is too thick, add a splash more beef broth.

            Season: After simmering, taste and season with salt and pepper as desired.

              Serve: Ladle the goulash into bowls, garnishing with fresh chopped parsley for a pop of color.
