4 cups water

4 tablespoons Kashmiri green tea (or any good quality green tea)

¼ teaspoon baking soda

2 cups milk (preferably whole milk)

½ cup heavy cream (optional for richness)

4 tablespoons sugar (adjust to taste)

½ teaspoon cardamom powder

Chopped pistachios and almonds for garnish

A pinch of salt

In a large saucepan, bring the water to a rolling boil.

    Add the Kashmiri green tea and baking soda to the boiling water—the baking soda will help release the color from the tea.

      Continue boiling the tea on medium-low heat for about 10-15 minutes, stirring occasionally. The color will deepen as it reduces.

        After the color has developed to a deep red-brown, add the milk and stir well.

          Keep boiling the tea for another 10 minutes until it reaches a creamy consistency and the color transforms to a rose pink.

            Add sugar, cardamom powder, and a pinch of salt, stirring well to dissolve the sugar completely.

              Once the desired flavor and color are achieved, remove from heat. If using heavy cream, whisk it into the chai at this stage for extra creaminess.

                Strain the chai into cups to remove the tea leaves and foam it (a traditional method is to pour it back and forth between two containers to aerate the drink and create a frothy top).

                  Garnish with chopped pistachios and almonds.
