2 slices whole-grain bread

1 ripe avocado

1 large egg

1 slice of cheddar cheese

2 slices of tomato

1 handful of spinach or arugula

1 tablespoon olive oil

Salt and pepper to taste

Red pepper flakes (optional)

1 teaspoon lemon juice

Instructions
 

Begin by toasting the whole-grain bread slices in a toaster or on a skillet until golden and crispy.

    Meanwhile, in a small bowl, mash the ripe avocado with lemon juice, salt, and pepper to taste. Set aside.

      Heat the olive oil in a non-stick skillet over medium heat. Crack the egg into the skillet and cook to your desired doneness (sunny-side up or over-easy works great).

        Once the egg is almost done, place the slice of cheddar cheese on top to melt slightly.

          Assemble the sandwich: On one slice of toasted bread, layer the mashed avocado, followed by the spinach or arugula, tomato slices, and the cooked egg with melted cheese.

            Sprinkle some red pepper flakes on top if you like heat.

              Top with the second slice of bread, then slice the sandwich in half for easier handling.
