Ingredients

2 ripe avocados, diced

1 cup fresh corn kernels (or canned if not available)

1 medium red onion, finely chopped

1 jalapeño, deseeded and minced (adjust to taste)

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

2 tablespoons lime juice

1 tablespoon olive oil

Salt and pepper to taste

Instructions

Start by preparing your ingredients: dice the avocados, chop the red onion, and halve the cherry tomatoes. If using fresh corn, steam or grill the corn until tender, then cut the kernels off the cob.

In a large mixing bowl, combine the diced avocados, corn kernels, chopped red onion, minced jalapeño, and halved cherry tomatoes.

Add the chopped cilantro to the bowl for a fresh flavor boost.

In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Pour this dressing over the salsa ingredients.

Gently toss everything together until well mixed, being careful not to mash the avocados.

Taste the salsa and adjust seasoning with more salt, pepper, or lime juice if desired.

Cover the salsa with plastic wrap and let it sit in the refrigerator for about 15-30 minutes to allow the flavors to meld together.

                Prep Time: 10 mins | Total Time: 40 mins | Servings: 4-6

Presentation Tips: Serve the salsa in a colorful bowl, garnished with additional cilantro leaves and lime wedges on the side. Pair it with tortilla chips for a delightful dip or use it as a topping for grilled chicken or fish.
