2 cups milk (whole or 2%)

1 cup shredded sharp cheddar cheese

1 cup cooked breakfast sausage, crumbled

1 bell pepper, diced (red or green)

1 small red onion, finely chopped

2 tablespoons fresh chives, chopped (plus extra for garnish)

1 teaspoon garlic powder

Salt and black pepper to taste

1 tablespoon olive oil

Instructions
 

Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish with olive oil.

    In a large bowl, whisk together the eggs, milk, garlic powder, salt, and pepper until well blended.

      In the greased baking dish, add the cubed bagels evenly across the bottom.

        Sprinkle the crumbled sausage, diced bell pepper, chopped onion, and half of the shredded cheddar cheese over the bagels.

          Pour the egg mixture evenly over the entire casserole, making sure all ingredients are well soaked.

            Top with the remaining cheddar cheese and sprinkle the fresh chives on top.

              Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

                After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and the center is set.

                  Allow it to cool slightly before slicing into squares. Serve warm.
