Baked Chicken Ricotta Meatballs

1 lb ground chicken

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs

1 egg

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 cup marinara sauce

Fresh basil or parsley for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the ground chicken, ricotta cheese, Parmesan cheese, breadcrumbs, egg, minced garlic, Italian seasoning, red pepper flakes (if using), salt, and pepper. Mix until all ingredients are well incorporated.

      Shape the mixture into meatballs, about 1.5 inches in diameter, and place them on a baking sheet lined with parchment paper.

        Lightly spray the meatballs with cooking spray or drizzle with a little olive oil to ensure they brown nicely in the oven.

          Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through (internal temperature of 165°F or 74°C).

            While the meatballs are baking, heat the marinara sauce in a small saucepan over low heat.

              Once the meatballs are done, remove them from the oven and carefully place them in the sauce to coat. Allow them to simmer for a few minutes.

                Serve the meatballs garnished with fresh basil or parsley alongside pasta, zoodles, or a side salad.
