Ingredients
  

4 large eggs

1/2 cup cherry tomatoes, halved

1/2 cup fresh spinach, chopped

1/4 cup feta cheese, crumbled

1/4 cup heavy cream

1 tablespoon olive oil

1 teaspoon dried basil

Salt and pepper to taste

Fresh parsley, for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a medium oven-safe skillet or baking dish, heat the olive oil over medium heat. Add the halved cherry tomatoes and sauté for 2–3 minutes until they begin to soften.

      Add the chopped spinach to the skillet and sauté for an additional 1–2 minutes, until wilted.

        Remove the skillet from heat and spread the vegetable mixture evenly across the bottom.

          Carefully crack the eggs on top of the vegetables, spacing them evenly.

            Drizzle the heavy cream over the eggs, ensuring each egg is slightly coated.

              Sprinkle the crumbled feta cheese, dried basil, salt, and pepper evenly over the top.

                Transfer the skillet or baking dish to the oven and bake for 12–15 minutes, or until the eggs are set but still slightly runny in the center (adjust the time for firmer yolks, if desired).

                  Once done, remove from the oven and let it cool for a minute. Garnish with fresh parsley before serving.
