Instructions
Preheat the oven to 400°F (200°C).
In a large baking dish, arrange the cherry tomatoes, diced bell pepper, and red onion evenly.
Drizzle the vegetables with 1 tablespoon of olive oil, then sprinkle with dried oregano, salt, and pepper. Toss gently to coat.
Place the block of feta cheese in the center of the vegetables. Drizzle the remaining olive oil over the feta.
Bake in the preheated oven for about 25-30 minutes, or until the tomatoes are blistered and the feta is golden and melty.
While the feta and vegetables are baking, cook the orzo pasta according to package instructions until al dente. Drain and set aside.
Remove the baking dish from the oven. Using a fork, mash the feta cheese and mix it with the roasted vegetables until combined.
Add the cooked orzo to the feta-vegetable mixture and stir until all ingredients are well incorporated.
Serve warm, garnished with fresh basil leaves. Adjust seasoning with salt and pepper if needed.
