1 cup all-purpose flour

1/2 cup granulated sugar

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon lemon zest

1/2 cup Greek yogurt

1/4 cup unsweetened applesauce

1 large egg

2 tablespoons lemon juice

1 cup fresh blueberries (or frozen, thawed)

For the glaze:

1 cup powdered sugar

2 tablespoons lemon juice

Preheat your oven to 350°F (175°C) and grease a donut pan with non-stick spray.

    In a medium mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and lemon zest until evenly distributed.

      In another bowl, combine the Greek yogurt, applesauce, egg, and lemon juice. Whisk until smooth and well blended.

        Slowly fold the wet ingredients into the dry ingredients, mixing until just combined. Be careful not to overmix.

          Gently fold in the blueberries, ensuring they are evenly distributed in the batter.

            Spoon the batter into the prepared donut pan, filling each mold about 3/4 full.

              Bake in the preheated oven for 12-15 minutes or until the tops spring back when touched and a toothpick comes out clean.

                Allow the donuts to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

                  While cooling, prepare the glaze by mixing the powdered sugar and lemon juice together until smooth. Adjust the thickness by adding more sugar or lemon juice as needed.

                    Once the donuts are cooled, dip the tops into the glaze and let any excess drip off. Place back on wire rack until the glaze sets.
