1 cup all-purpose flour

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon vanilla extract

1/2 cup Greek yogurt

1 large egg

1/4 cup unsweetened applesauce

1 cup fresh raspberries (or frozen, thawed)

1 tablespoon lemon zest

1 tablespoon lemon juice

Instructions
 

Preheat your oven to 350°F (175°C) and grease a donut pan with non-stick spray or lightly butter it.

    In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until combined.

      In a separate bowl, mix the Greek yogurt, vanilla extract, egg, applesauce, lemon zest, and lemon juice until smooth.

        Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix – a few lumps are okay!

          Gently fold in the fresh raspberries, taking care not to break them apart.

            Transfer the batter to a piping bag or resealable plastic bag with the corner snipped off. Pipe the batter into the donut pan, filling each well about 2/3 full.

              Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center comes out clean.

                Allow the donuts to cool in the pan for about 5 minutes, then carefully transfer them to a wire rack to cool completely.

                  - Presentation Tips: For a special touch, dust the cooled donuts with powdered sugar or drizzle a simple glaze made from powdered sugar and lemon juice. Serve on a colorful platter with fresh raspberries scattered around.
