1 cup all-purpose flour

1/4 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 cup unsalted butter, melted

1 large egg

3 large ripe bananas, mashed

1 teaspoon vanilla extract

1 cup vanilla pudding (store-bought or homemade)

1/2 cup whipped cream

1/2 teaspoon ground cinnamon

1/4 cup mini chocolate chips (optional)

Fresh banana slices for garnish

Prepare the Taco Shells: In a medium bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

    Add the melted butter, egg, mashed bananas, and vanilla extract to the dry ingredients, stirring until a smooth batter forms.

      Heat a non-stick skillet over medium heat and lightly grease with cooking spray or a bit of butter.

        Pour about 1/4 cup of batter into the skillet, spreading it into a thin circle. Cook for 2-3 minutes on each side until golden and cooked through. Repeat to make about 8-10 taco shells.
