1 lb shrimp, peeled and deveined

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

2 large eggs, beaten

1 cup panko breadcrumbs

Vegetable oil (for frying)

1/2 cup mayonnaise

3 tablespoons sweet chili sauce

1 tablespoon sriracha (more or less for heat)

1 cup shredded lettuce

1 avocado, sliced

1 green onion, finely chopped (for garnish)

Fresh cilantro (for garnish)

Instructions
 

In a mixing bowl, combine the flour, garlic powder, paprika, cayenne pepper, salt, and pepper. Mix until well combined.

    Set up a breading station: in one bowl, place the flour mixture; in another, beat the eggs; and in a third, place the panko breadcrumbs.

      Dip each shrimp first into the flour mixture, shaking off excess, then into the beaten eggs, and finally coat with panko breadcrumbs.

        Heat vegetable oil in a large skillet over medium-high heat. Fry the shrimp in batches until golden brown and cooked through, about 2-3 minutes per side. Transfer to a plate lined with paper towels to drain excess oil.

          In a separate bowl, mix together the mayonnaise, sweet chili sauce, and sriracha until smooth. Set aside.

            To assemble, take small serving cups or lettuce cups. Begin by adding a layer of shredded lettuce at the bottom, then layer on a few slices of avocado.

              Place 3-4 fried shrimp on top of the avocado in each cup. Drizzle the Bang Bang sauce over the shrimp generously.

                Garnish each cup with chopped green onions and fresh cilantro for an extra pop of color.
