Ingredients

6 pork sausages (or your choice of plant-based sausages for a vegetarian option)

4 large russet potatoes, peeled and chopped

1/2 cup whole milk

3 tablespoons unsalted butter

Salt and pepper to taste

1 tablespoon olive oil

1 medium onion, finely sliced

2 cloves garlic, minced

1 cup beef or vegetable broth

1 tablespoon Worcestershire sauce (optional)

Fresh parsley, chopped (for garnish)

Instructions

Begin by boiling the chopped potatoes in salted water for about 15-20 minutes, or until fork-tender. Drain and return to the pot.

Add the milk and butter to the drained potatoes. Mash until smooth, seasoning with salt and pepper to taste. Keep warm.

In a large skillet, heat the olive oil over medium heat. Add the sausages and cook until browned on all sides, about 10-12 minutes. Remove and set aside.

In the same skillet, add the sliced onion and cook for about 5-7 minutes, or until caramelized. Add the minced garlic, cooking for an additional minute.

Pour in the broth and Worcestershire sauce (if using), scraping up any brown bits from the bottom of the pan. Return the sausages to the skillet and simmer in the broth for 5-10 minutes until cooked through.

Serve the sausages on a bed of creamy mashed potatoes, drizzling the onion and gravy mixture over the top.

Garnish with freshly chopped parsley for a vibrant finish.
