4 quality pork sausages (or your choice of chicken or vegetarian sausages)

2 pounds potatoes, peeled and chopped

1 cup whole milk

4 tablespoons unsalted butter

2 large onions, thinly sliced

2 tablespoons olive oil

1 tablespoon all-purpose flour

2 cups beef or vegetable stock

1 teaspoon Worcestershire sauce

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Potatoes: In a large pot, place the chopped potatoes and cover with cold water. Add a pinch of salt and bring to a boil. Cook for about 15-20 minutes, or until the potatoes are fork-tender. Drain and set aside.

    Prepare the Sausages: In a large skillet, heat the olive oil over medium-high heat. Add the sausages and cook for about 12-15 minutes, turning occasionally, until browned and cooked through. Remove from the skillet and keep warm.

      Caramelize the Onions: In the same skillet, add the sliced onions and a pinch of salt. Lower the heat to medium and cook for about 10-15 minutes, stirring often, until the onions are golden brown and caramelized.

        Make the Gravy: Sprinkle the flour over the caramelized onions and cook for an additional minute, stirring constantly. Slowly add the stock, whisking to avoid lumps. Stir in the Worcestershire sauce and let it simmer for about 5 minutes, until thickened. Season with salt and pepper to taste.

          Mash the Potatoes: While the gravy simmers, return the drained potatoes to the pot. Add the butter and milk. Mash until smooth and creamy, seasoning with salt and pepper to taste.

            Serve: Place a generous scoop of mashed potatoes onto each plate, top with a sausage or two, and ladle over the caramelized onion gravy.

              Garnish: Sprinkle freshly chopped parsley over the dish for a burst of color and flavor.
