4 large potatoes, peeled and diced

1 cup milk

4 tablespoons butter

Salt and pepper, to taste

2 large onions, thinly sliced

2 tablespoons olive oil

2 tablespoons all-purpose flour

2 cups chicken or vegetable broth

1 teaspoon Worcestershire sauce

1 teaspoon Dijon mustard

Fresh parsley, chopped (for garnish)

Cook the Potatoes: Place the diced potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook for about 15-20 minutes until tender. Drain and return to the pot.

    Prepare the Sausages: While the potatoes are cooking, heat a large skillet over medium heat. Add the sausages and cook until browned on all sides, about 8-10 minutes. Remove and set aside.

      Caramelize the Onions: In the same skillet, add olive oil and sliced onions. Cook over medium-low heat, stirring frequently, for about 10-15 minutes until the onions are golden and caramelized. Sprinkle with flour, stirring constantly for about 2 minutes to cook the flour.

        Make the Gravy: Gradually add the chicken or vegetable broth while whisking to avoid lumps. Bring to a simmer and let it thicken for about 5 minutes. Stir in Worcestershire sauce, Dijon mustard, and season with salt and pepper.

          Prepare the Mash: To the drained potatoes in the pot, add butter and milk. Mash until smooth and creamy, and season with salt and pepper to taste.
