4 pork sausages (your choice of flavor)

2 tablespoons olive oil

4 large potatoes, peeled and chopped

1 cup milk

1/2 cup unsalted butter

Salt and pepper to taste

1 cup shallots, finely chopped

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 tablespoon fresh thyme, chopped

1/2 cup chicken or vegetable broth

Fresh parsley, for garnish

Instructions
 

Prepare the Potatoes: In a large pot, place the chopped potatoes and cover with cold water. Add a pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes. Drain and return to the pot.

    Mash the Potatoes: Add the butter and milk to the drained potatoes. Mash until creamy and smooth. Season with salt and pepper to taste. Keep warm.

      Cook the Sausages: In a large skillet, heat the olive oil over medium heat. Add the sausages and cook until browned on all sides and cooked through, about 12-15 minutes. Remove from the skillet and keep warm.

        Sauté Shallots and Garlic: In the same skillet, add the chopped shallots and cook until soft and caramelized, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.

          Create the Gravy: Add the Worcestershire sauce and thyme to the shallots. Pour in the broth and bring to a simmer. Cook for 3-4 minutes until slightly thickened. Season with salt and pepper.

            Serve Together: On each plate, place a generous portion of mashed potatoes. Top with the sausages and drizzle the shallot gravy over the top.

              Garnish: Sprinkle with freshly chopped parsley for added color and flavor.
