Ingredients

2 ribeye steaks (1 inch thick)

8 jumbo shrimp, peeled and deveined

3 tablespoons olive oil, divided

2 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon lemon juice

Fresh parsley, chopped for garnish

Instructions

Prepare the Steaks: Take the ribeye steaks out of the refrigerator and let them rest at room temperature for about 30 minutes to 1 hour. This helps them cook more evenly.

Season the Steaks: Drizzle 1 tablespoon of olive oil over the steaks. Rub them with minced garlic, chopped rosemary, thyme, smoked paprika, salt, and pepper. Let the steaks marinate for about 15-20 minutes.

Cook the Steaks: Heat a cast-iron skillet or grill pan over high heat. Add 1 tablespoon of olive oil. Once hot, place the steaks in the pan. Cook for about 4-5 minutes on each side for medium-rare, or until your desired level of doneness is reached. Remove from the heat and let them rest for 5 minutes.

Prepare the Shrimp: While the steaks are resting, toss the jumbo shrimp in a bowl with the remaining tablespoon of olive oil, lemon juice, and a pinch of salt and pepper.

Cook the Shrimp: In the same pan used for the steaks (adding a bit more olive oil if needed), cook the shrimp over medium-high heat for about 2-3 minutes per side, or until they turn pink and opaque.

Serve: Plate the ribeye steaks and top each with the sautéed jumbo shrimp. Drizzle any remaining pan juices over the top for added flavor. Garnish with chopped parsley for a fresh touch.

Presentation Tips: Serve the steak and shrimp on a large plate, accompanied by a side of garlic mashed potatoes or grilled vegetables. Arrange the shrimp on top of the steak for a beautiful layered effect, and sprinkle with extra parsley for a pop of color.
