1 lb beef sirloin, thinly sliced

2 tablespoons shawarma spice blend (cumin, coriander, paprika, turmeric, garlic powder, and cinnamon)

3 tablespoons olive oil

1 small onion, thinly sliced

1 large tomato, diced

1 cup lettuce, shredded (romaine or iceberg)

1/2 cup pickled turnips (optional)

1/4 cup fresh parsley, chopped

1/4 cup tahini sauce

4 pita bread or flatbreads

Salt and pepper to taste

Lemon wedges for serving

In a large bowl, combine the sliced beef, shawarma spice blend, olive oil, salt, and pepper. Mix well, ensuring the beef is evenly coated with the spices.

    Place the marinated beef in a resealable bag or covered bowl and let it marinate in the refrigerator for at least 30 minutes (or up to 4 hours for deeper flavor).

      Preheat a skillet or grill pan over medium-high heat. Once hot, add the marinated beef in a single layer (you may need to do this in batches). Cook for about 2-3 minutes per side, or until the beef is browned and cooked through.

        Remove the beef from the pan and let it rest for a couple of minutes before slicing it further into smaller pieces if desired.

          In the same pan, add the sliced onions and cook over medium heat until they become soft and translucent, about 5 minutes.

            To assemble the sandwiches, take a pita or flatbread and spread a generous amount of tahini sauce on the inside.

              Layer the cooked beef on top of the tahini sauce, followed by the diced tomatoes, shredded lettuce, sautéed onions, pickled turnips, and chopped parsley.

                Roll the pita or fold the flatbread over the filling, pressing gently to hold it together.

                  Serve warm with lemon wedges on the side for extra brightness and flavor.
