8 oz mushrooms, sliced (button or cremini)

2 cups beef broth

1 tablespoon Worcestershire sauce

2 tablespoons soy sauce

1 teaspoon dried thyme

1 teaspoon paprika

1/2 cup heavy cream

Salt and pepper to taste

2 tablespoons cornstarch mixed with 2 tablespoons cold water (for thickening)

Fresh parsley, chopped (for garnish)

In a large skillet over medium-high heat, heat the olive oil.

    Season the beef tips with salt and pepper. Once the oil is hot, add the beef tips in batches, browning them on all sides (about 5-7 minutes). Remove the browned beef and set aside.

      In the same skillet, add the chopped onion and minced garlic, cooking until the onion becomes translucent (around 3-4 minutes).

        Add the sliced mushrooms to the skillet and sauté until they are golden brown and have released their moisture (about 5 minutes).

          Stir in the beef broth, Worcestershire sauce, soy sauce, thyme, and paprika. Bring the mixture to a gentle simmer.

            Return the beef tips to the skillet, cover, and let simmer for about 20-25 minutes, allowing the beef to absorb the flavors.

              Stir in the heavy cream for a rich consistency and flavor.
