1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper, diced (red or green)

2 cups cooked potatoes, cubed (or use tater tots)

1 cup corn, frozen or canned

1 can (15 oz) black beans, drained and rinsed

1 cup shredded cheddar cheese

1 cup diced tomatoes (fresh or canned)

1 tablespoon chili powder

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet over medium heat, brown the ground beef until fully cooked, breaking it up with a wooden spoon. Drain excess grease.

      Add the diced onion, minced garlic, and bell pepper to the skillet. Sauté for about 5 minutes or until the vegetables are softened.

        Stir in the corn, black beans, diced tomatoes, chili powder, cumin, salt, and pepper. Mix well and let it simmer for 5 minutes to allow flavors to meld.

          In a large casserole dish, layer half of the cooked potatoes or tater tots on the bottom.

            Spoon the beef mixture evenly over the potatoes. Top the beef mixture with the remaining potatoes.

              Sprinkle the shredded cheddar cheese evenly on top of the casserole.

                Cover the dish with aluminum foil and bake for 25 minutes. Then remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.

                  Once done, remove from the oven and let it cool for a few minutes before serving.

                    Garnish with fresh cilantro before serving to add a burst of color and flavor.
