Best Chicken Enchiladas

Ingredients
  

2 cups cooked chicken, shredded

1 cup shredded cheese (cheddar or Monterey Jack)

1 can (10 oz) red enchilada sauce

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 small red onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

8 small flour tortillas

2 tablespoons olive oil

Fresh cilantro, for garnish

Sour cream, for serving (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a skillet, heat olive oil over medium heat. Add the chopped onions and sauté for about 3-4 minutes or until translucent.

      Stir in the minced garlic and cook for another minute till fragrant.

        In a large bowl, combine the shredded chicken, sautéed onion and garlic, black beans, corn, cumin, smoked paprika, and half of the shredded cheese. Mix well.

          Spread a thin layer of enchilada sauce on the bottom of a 9x13 inch baking dish.

            Take a tortilla, fill it with about 1/4 cup of the chicken mixture, and roll it tightly. Place the rolled enchilada seam side down into the baking dish. Repeat with the remaining tortillas.

              Once all enchiladas are in the dish, pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.

                Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.

                  Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and slightly golden.

                    Garnish with fresh cilantro before serving.
