Ingredients

4 slices of brioche bread, cubed

3 large eggs

1 cup milk

1/4 cup maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 cup chopped walnuts (optional)

1/4 cup raisins or dried cranberries (optional)

Butter or non-stick spray for greasing

Instructions

Preheat your oven to 350°F (175°C) and grease a muffin tin with butter or non-stick spray.

In a large mixing bowl, whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, and nutmeg until well combined.

Add the cubed brioche bread to the mixture, ensuring all pieces are soaked. Allow them to sit for about 10 minutes so the bread absorbs the custard mix.

If using, fold in the chopped walnuts and raisins or dried cranberries until evenly distributed.

Using a spoon or ice cream scoop, fill each muffin cup with the soaked brioche mixture, pressing down gently to pack it in.

Bake in the preheated oven for 20-25 minutes or until the tops are golden brown and a toothpick inserted comes out clean.

Let the muffin cups cool in the pan for 5 minutes before gently removing them using a fork or knife.

Serve warm, drizzled with extra maple syrup or sprinkled with powdered sugar if desired.
