1 lb ground beef or turkey

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes (with juices)

2 tablespoons tomato paste

1 cup beef or vegetable broth

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

Optional toppings: shredded cheese, sour cream, chopped green onions, fresh cilantro

Instructions
 

Sauté the Meat: Turn on the Instant Pot and select the Sauté function. Add the ground beef or turkey and cook until browned, breaking it apart with a wooden spoon. Drain excess fat if required.

    Add Aromatics: Add the diced onion, garlic, and bell pepper to the pot. Continue to sauté for about 3-4 minutes until the vegetables are softened.

      Mix in Spices: Stir in the chili powder, cumin, smoked paprika, cayenne pepper, and season with salt and pepper. Cook together for another minute to let the spices bloom.

        Incorporate Remaining Ingredients: Add the tomato paste, diced tomatoes (with juices), kidney beans, black beans, and broth. Stir everything together until well combined.

          Pressure Cook: Close the lid of the Instant Pot and ensure the valve is set to Sealing. Select the Manual or Pressure Cook function and set the timer for 15 minutes.

            Release Pressure: Once cooking is complete, allow the pot to naturally release pressure for 10 minutes, then carefully switch the valve to Venting to release any remaining pressure.

              Serve and Enjoy: Open the lid, give the chili a good stir, and taste for seasoning, adjusting as necessary.
