Ingredients

8 oz (225g) cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy cream, whipped to soft peaks

1 cup fresh mixed berries (strawberries, blueberries, raspberries)

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

2 tablespoons honey

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Base: In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix well until the crumbs are fully coated. Press the mixture firmly into the bottom of an 8x8 inch square baking dish to create an even layer. Chill in the refrigerator for 15 minutes.

Make the Cream Cheese Filling: In another bowl, beat the softened cream cheese until smooth. Add in the powdered sugar and vanilla extract, mixing until fully combined and creamy.

Fold in the Whipped Cream: Carefully fold the whipped cream into the cream cheese mixture in three additions. This will keep the filling light and airy. Mix until there are no white streaks remaining.

Layer with Berries: Gently fold in 3/4 cup of the mixed berries into the cream cheese mixture. Reserve the remaining berries for topping later.

Assemble the Squares: Pour the cream cheese and berry mixture over the chilled graham cracker crust and smooth it out with a spatula.

Chill to Set: Cover the dish with plastic wrap and place it in the refrigerator for at least 4 hours, or overnight, until firm.

Serve: Once set, cut into squares and top each piece with the remaining mixed berries. Drizzle a little honey over the top if desired, and garnish with fresh mint leaves for a pop of color.
