4 large buttery croissants

4 large eggs

4 slices of sharp cheddar cheese

8 slices of cooked bacon or 1 cup of sautéed spinach (for a vegetarian option)

1 ripe avocado, sliced

1 tablespoon of finely chopped chives

Salt and pepper to taste

1 tablespoon butter

Hot sauce (optional)

Preheat Oven: Preheat your oven to 350°F (175°C). This will be used to melt the cheese on the croissants later.

    Cook the Eggs: In a medium skillet, melt the butter over medium heat. Crack the eggs directly into the skillet, being careful not to break the yolks. Season with salt and pepper.

      Cook Until Just Set: Cook the eggs until the whites are fully set but the yolks are still slightly runny, about 3 to 4 minutes. If you prefer your yolks harder, cook for an additional minute.

        Prepare the Croissants: While the eggs are cooking, slice the croissants in half horizontally. Place the bottom halves on a baking sheet.
