1 cup strong brewed coffee, cooled

3 large eggs, separated

3/4 cup granulated sugar

1 teaspoon vanilla extract

8 oz mascarpone cheese, room temperature

1 cup heavy whipping cream

24 ladyfinger cookies

Unsweetened cocoa powder, for dusting

Dark chocolate shavings, for garnish (optional)

Prepare Coffee: Brew a cup of strong coffee and let it cool to room temperature. Set aside.

    Whip Eggs: In a mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and creamy. Add the vanilla extract and continue whisking until well combined.

      Incorporate Mascarpone: Gently fold the mascarpone cheese into the yolk mixture until smooth and combined.

        Whip Cream: In another bowl, whip the heavy cream to soft peaks. Carefully fold the whipped cream into the mascarpone mixture until fully incorporated.

          Whip Egg Whites: In a clean mixing bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the mascarpone and cream mixture, being careful not to deflate the mixture.

            Soak Ladyfingers: Quickly dip each ladyfinger in the cooled coffee, ensuring they are soaked but not soggy. Lay half of the soaked ladyfingers in a single layer in the bottom of a 9x9 inch dish.

              Layer the Mixture: Spread half of the mascarpone mixture over the first layer of ladyfingers.

                Repeat Layers: Dip the remaining ladyfingers in coffee and add them on top of the mascarpone layer. Spread the remaining mascarpone mixture over this second layer of ladyfingers.

                  Chill: Cover and refrigerate the tiramisu for at least 4 hours, preferably overnight to allow the flavors to meld and the dessert to set.

                    Serve: Dust the top with cocoa powder just before serving and garnish with chocolate shavings if desired.
