2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup cold unsalted butter, cubed

3/4 cup milk

1 pound breakfast sausage (preferred flavor)

1/4 cup all-purpose flour (for gravy)

2 cups milk (for gravy)

1/2 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional)

1 cup shredded cheddar cheese

2 large eggs

Fresh chives, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 450°F (230°C).

    Make the Biscuits: In a large mixing bowl, whisk together 2 cups of flour, 1 tablespoon of baking powder, and 1/2 teaspoon of salt. Add the cold cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

      Add Milk: Pour in 3/4 cup of milk and stir until just combined. Turn the dough out onto a floured surface and knead gently for a minute. Roll out to about 1/2-inch thickness and cut into circles or squares.

        Bake Biscuits: Place biscuits on a baking sheet lined with parchment paper and bake for 10-12 minutes, or until golden brown. Remove from the oven and set aside.

          Make Sausage Gravy: In a skillet over medium heat, cook the breakfast sausage until browned and crumbled. Remove the sausage and drain excess grease, leaving about 1-2 tablespoons in the pan.

            Create Gravy Base: Sprinkle 1/4 cup of flour over the grease and whisk to create a roux. Gradually add in 2 cups of milk, stirring continuously to prevent lumps. Cook until the gravy thickens, then season with black pepper and red pepper flakes if using. Return the sausage to the skillet and mix well.

              Assemble Pizza: On a large pizza stone or baking sheet, layer the baked biscuits to form the pizza base. Pour the sausage gravy evenly over the biscuits. Sprinkle shredded cheddar cheese on top.

                Add Eggs: In small saucers, crack the eggs gently and make small indentations on the pizza surface where each egg will go. Carefully slide the eggs onto the pizza.

                  Bake the Pizza: Place the assembled pizza in the oven and bake for an additional 10-15 minutes, or until the cheese is bubbly and the eggs are cooked to your desired level (yolk soft or firm).

                    Serve and Garnish: Remove the pizza from the oven and let it cool slightly. Garnish with fresh chives. Slice and serve warm.
