2 boneless, skinless chicken breasts

Salt and pepper to taste

2 tablespoons olive oil

1 cup fresh blackberries, plus extra for garnish

4 cups mixed salad greens (arugula, spinach, and romaine)

1/3 cup crumbled feta cheese

1/4 cup sliced almonds

1/4 cup red onion, thinly sliced

1/4 cup balsamic vinegar

1 tablespoon honey

1 teaspoon Dijon mustard

1/4 cup extra virgin olive oil

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat the olive oil in a skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side until golden brown and fully cooked through. Remove from heat and let them rest before slicing.

    Make the Dressing: In a small bowl, whisk together balsamic vinegar, honey, Dijon mustard, and extra virgin olive oil. Adjust seasoning with salt and pepper to taste.

      Assemble the Salad: In a large bowl, combine the mixed salad greens, sliced red onion, sliced almonds, and fresh blackberries. Drizzle half of the dressing over the salad and toss gently to combine.

        Slice the Chicken: Once the chicken has cooled slightly, slice it into strips and place it on top of the prepared salad.
