4 salmon fillets, skinless

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cayenne pepper (adjust for heat)

Salt and black pepper to taste

For the Stuffing:

2 cups fresh spinach, chopped

½ cup cream cheese, softened

⅓ cup grated Parmesan cheese

1 clove garlic, minced

¼ teaspoon nutmeg

Salt and pepper to taste

Instructions
 

Preheat your oven to 375°F (190°C).

    In a small bowl, combine smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper to create the blackening seasoning.

      Drizzle olive oil over the salmon fillets and rub the blackening seasoning evenly on both sides of each fillet.

        In a skillet over medium heat, add a little olive oil and sauté the minced garlic for about 1 minute until fragrant.

          Add the chopped spinach to the skillet and cook until wilted, about 3 minutes. Remove from heat and let cool slightly.

            In a mixing bowl, combine the sautéed spinach with cream cheese, grated Parmesan, nutmeg, salt, and pepper. Mix until well combined.

              Make a pocket in each salmon fillet by cutting horizontally through the thickest side, ensuring not to cut all the way through.

                Stuff each salmon fillet with the creamy spinach mixture, pressing gently to secure.

                  Heat a non-stick oven-safe skillet over medium-high heat. Once hot, add the stuffed salmon fillets seam-side down and sear for 2-3 minutes until golden brown.

                    Carefully flip the fillets and transfer the skillet to the preheated oven. Bake for an additional 10-12 minutes until the salmon is cooked through and flakes easily with a fork.

                      Remove from the oven and let rest for a couple of minutes before serving.
