Ingredients

4 salmon fillets (about 6 oz each)

2 cups fresh spinach, chopped

1/2 cup grated Parmesan cheese

3 tablespoons cream cheese, softened

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon cayenne pepper

1 teaspoon onion powder

1 teaspoon garlic powder

Salt and black pepper, to taste

2 tablespoons olive oil

Lemon wedges, for serving

Instructions

Prepare the Spinach Filling: In a skillet over medium heat, add 1 tablespoon of olive oil. Sauté minced garlic until fragrant (about 1 minute), then add chopped spinach. Cook for 2-3 minutes until wilted. Remove from heat.

Mix the Ingredients: In a bowl, combine the sautéed spinach, grated Parmesan, cream cheese, salt, and black pepper. Stir until well mixed and set aside.

Prepare the Salmon: Preheat the oven to 400°F (200°C). Carefully make a slit on the side of each salmon fillet to create a pocket for stuffing.

Stuff the Salmon: Generously fill each salmon pocket with the spinach and cheese mixture. Gently press the edges to secure the stuffing.

Season and Cook the Salmon: In a small bowl, mix paprika, cayenne pepper, onion powder, garlic powder, salt, and black pepper. Rub this spice mix all over the stuffed salmon fillets.

Sear the Salmon: Heat the remaining olive oil in an oven-safe skillet over medium-high heat. Place the salmon fillets skin-side down in the skillet and sear for about 3-4 minutes, until the skin is crispy.

Bake the Salmon: Carefully transfer the skillet to the preheated oven. Bake for an additional 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.

Serve: Remove the salmon from the oven and let it rest for a couple of minutes. Serve hot with lemon wedges on the side.

                  Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4

                    - Presentation Tips: Plate each stuffed salmon fillet alongside a fresh salad or some roasted vegetables. Garnish with additional Parmesan cheese and a slice of lemon for a pop of color.
