Blackened Shrimp Cavatappi

12 oz cavatappi pasta

1 lb shrimp, peeled and deveined

2 tablespoons blackened seasoning

2 tablespoons olive oil

1 bell pepper (red or yellow), sliced

1 small red onion, thinly sliced

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped

Salt and pepper to taste

Instructions
 

Cook the Cavatappi:

    In a large pot, bring salted water to a boil. Add the cavatappi pasta and cook according to package instructions until al dente. Drain and set aside.

      Prepare the Shrimp:

        In a bowl, toss the shrimp with blackened seasoning, ensuring that each shrimp is well-coated.

          Sauté the Vegetables:

            In a large skillet, heat the olive oil over medium heat. Add the sliced bell pepper and red onion. Sauté for about 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.

              Cook the Shrimp:

                Push the vegetables to the side of the skillet and add the seasoned shrimp. Cook for about 2-3 minutes on each side until the shrimp turn pink and are cooked through. Remove the shrimp and vegetables from the skillet and set aside.

                  Create the Sauce:

                    In the same skillet, add the heavy cream and bring it to a gentle simmer. Stir in the grated Parmesan cheese and allow it to melt into the cream, creating a rich sauce. Season with salt and pepper to taste.

                      Combine Everything:

                        Add the cooked cavatappi to the skillet with the sauce and toss well to combine. Fold in the sautéed shrimp, bell pepper, and onion. Gently mix until everything is coated in the creamy sauce.

                          Finish with Tomatoes:

                            Add the halved cherry tomatoes for a fresh burst of flavor and gently toss to combine. Allow to heat through for another minute.

                              Serve:
