1 cup mashed ripe bananas (about 2 large bananas)

1 cup plain Greek yogurt

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/3 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup fresh or frozen blueberries

Optional: Zest of 1 lemon

Preheat your oven to 350°F (175°C). Grease a standard loaf pan (9x5 inches) and set aside.

    In a large mixing bowl, combine the mashed bananas, Greek yogurt, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until fully blended and smooth.

      In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and lemon zest (if using).

        Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Be careful not to over-mix; a few lumps are fine!

          Carefully fold in the blueberries, ensuring they are evenly distributed throughout the batter.

            Pour the batter into the prepared loaf pan and smooth out the top.

              Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted in the center comes out clean. Check for doneness after 55 minutes.

                Once done, remove the loaf from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
