Ingredients

1 cup all-purpose flour

1 cup whole wheat flour

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1 cup sugar

2 large eggs

1 teaspoon vanilla extract

1 cup sour cream

1 cup fresh blueberries

4 oz cream cheese, cut into small cubes

Zest of 1 lemon

Instructions

Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease with non-stick spray.

In a medium bowl, combine the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt. Whisk together and set aside.

In a large bowl, cream together the softened butter and sugar until light and fluffy, about 3-4 minutes.

Add the eggs, one at a time, mixing well after each addition. Then, stir in the vanilla extract and lemon zest until combined.

Gradually add the dry ingredient mixture to the wet ingredients, alternating with the sour cream. Begin and end with the flour mixture. Mix until just combined; do not overmix.

Gently fold in the fresh blueberries and cream cheese cubes, ensuring an even distribution without breaking the blueberries.

Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.

Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean and the tops are lightly golden.

Once baked, allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Prep Time: 15 minutes | Total Time: 40 minutes | Servings: 12 muffins

                      - Presentation Tips: Serve warm with a dusting of powdered sugar on top and a side of fresh blueberries for an added touch. Enjoy with a cup of tea or coffee!
