Ingredients

6 medium potatoes, peeled and cut into cubes

12 oz (340g) meatballs (store-bought or homemade)

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Boil the Potatoes: In a large pot, bring water to a boil. Add the cubed potatoes and a pinch of salt. Cook for about 15-20 minutes, or until the potatoes are fork-tender.

Preheat the Oven: While the potatoes are boiling, preheat your oven to 375°F (190°C).

Prepare the Meatballs: If using frozen meatballs, either bake them according to package instructions or pan-fry them in olive oil until heated through. If making homemade meatballs, ensure they are fully cooked.

Combine Ingredients: Once the potatoes are done, drain them and return to the pot. Mash them lightly with a fork, leaving some chunks for texture. Add garlic powder, onion powder, oregano, olive oil, salt, and pepper. Stir to combine.

Layer the Dish: In a greased 9x13 inch baking dish, spread half of the mashed potato mixture evenly on the bottom. Layer the meatballs on top, distributing them evenly, then sprinkle half of the mozzarella and cheddar cheese over the meatballs.

Add Remaining Potatoes: Spread the remaining mashed potatoes over the cheese and meatballs. Top with the remaining mozzarella and cheddar cheeses, and sprinkle with grated Parmesan cheese for an extra cheesy crust.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly, and the top is golden brown.

Serve: Once out of the oven, let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
