Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1 cup heavy cream

1/3 cup powdered sugar

1/2 cup semisweet chocolate chips

1 tablespoon vegetable oil

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Make the Cookie Dough: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add in the egg and vanilla extract, and mix until well combined.

Combine Dry Ingredients: In another bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

Scoop Cookies: Use a cookie scoop or tablespoon to drop rounded balls of dough onto the prepared baking sheets, leaving space between each cookie.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Prepare the Cream Filling: While the cookies cool, whip the heavy cream and powdered sugar in a mixing bowl until soft peaks form.

Assemble Cookies: Once the cookies are cool, pair them up. Spread a generous dollop of whipped cream on the flat side of one cookie, then sandwich it with another cookie to create a “pie” effect.

Make the Chocolate Glaze: In a microwave-safe bowl, combine the semisweet chocolate chips and vegetable oil. Heat in the microwave in 30-second intervals, stirring until melted and smooth.

Drizzle or Dip: Drizzle the chocolate glaze over the assembled cookies or dip the tops in the glaze for a more decadent finish.

Chill if Desired: Place the finished cookies in the refrigerator for about 30 minutes to set the chocolate glaze and firm up the cream.

Prep Time: 20 minutes | Total Time: 1 hour S ervings: 12-16 cookies

                        - Presentation Tips: Arrange the cookies on a tiered serving platter and dust with a little extra powdered sugar for an elegant touch, serving alongside a cup of coffee or tea.
