1 pound breakfast sausage, casing removed

6 large eggs

2 cups milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1/2 teaspoon black pepper

1/2 teaspoon salt

1 cup shredded cheddar cheese

1 cup diced bell peppers (mix of red and green for color)

1 cup diced fresh spinach

4 cups cubed day-old bread (such as sourdough or ciabatta)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish with cooking spray or olive oil.

    In a large skillet over medium heat, cook the breakfast sausage, breaking it apart with a wooden spoon, until browned and fully cooked (about 5-7 minutes). Drain excess grease and set aside.

      In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, thyme, black pepper, and salt until well combined.

        Layer half of the cubed bread in the bottom of the prepared baking dish, followed by half of the cooked sausage, half of the diced bell peppers, and half of the spinach.

          Sprinkle half of the shredded cheese over the first layer of ingredients.

            Repeat the layers with the remaining bread, sausage, bell peppers, spinach, and top with the remaining cheese.

              Pour the egg mixture evenly over the layered ingredients, ensuring everything is soaked and combined as much as possible.

                Gently press down on the casserole to make sure the ingredients absorb the egg mixture.

                  Cover with aluminum foil and bake in the preheated oven for 30 minutes.

                    Remove the foil and bake for an additional 15-20 minutes, or until the casserole is set in the middle and the cheese is golden and bubbly.

                      Allow the casserole to cool for about 10 minutes before slicing. Garnish with chopped fresh parsley before serving.
