2 cups all-purpose flour

1/2 cup unsalted butter, chilled and cubed

1/4 teaspoon salt

1/4 cup cold water

4 large eggs

1 cup cooked sausage or bacon, crumbled

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (mix of red and green)

1/4 cup green onions, sliced

1 teaspoon garlic powder

1/2 teaspoon black pepper

1 egg (for egg wash)

Instructions
 

Make the Dough: In a large bowl, mix the flour and salt together. Add the chilled butter and, using a pastry cutter or your fingers, combine until the mixture resembles coarse crumbs. Gradually add cold water, mixing until the dough comes together. Form it into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.

    Prepare the Filling: In a skillet over medium heat, scramble the eggs until fully cooked. Remove from heat and let cool slightly. In a bowl, combine the scrambled eggs, crumbled sausage or bacon, cheddar cheese, diced bell peppers, green onions, garlic powder, and black pepper. Mix well.

      Roll Out the Dough: Preheat your oven to 400°F (200°C). On a floured surface, roll the dough out to about 1/8 inch thick. Use a round cutter (about 5 inches in diameter) to cut out circles.

        Fill the Pies: Place a tablespoon of the filling in the center of each circle. Fold the circle in half to create a half-moon shape, and seal the edges by pressing with a fork to create a decorative edge.

          Egg Wash: Beat the last egg in a small bowl. Brush the tops of the hand pies with the egg wash to give them a golden color when baked.

            Bake: Place the hand pies on a parchment-lined baking sheet. Bake in the preheated oven for 20-25 minutes, or until golden brown.

              Cool and Serve: Allow the hand pies to cool for a few minutes before serving.
