12 small whole wheat slider buns

6 large eggs

1 cup spinach, chopped

1 cup cherry tomatoes, halved

1 cup cooked turkey sausage, crumbled

½ cup sharp cheddar cheese, shredded

2 tablespoons olive oil

1 tablespoon Dijon mustard

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Eggs: In a bowl, whisk the eggs with a pinch of salt, pepper, and the Dijon mustard. Add the chopped spinach and halved cherry tomatoes. Set aside.

      Cook the Eggs: Heat the olive oil in a non-stick skillet over medium heat. Pour in the egg mixture and cook gently, stirring occasionally until they are just set but still creamy. Remove from heat.

        Assemble the Sliders: Split the slider buns in half. On the bottom half of each bun, layer a spoonful of the cooked turkey sausage, followed by a generous scoop of the scrambled egg mixture, and finally a sprinkle of cheddar cheese.

          Top It Off: Place the top half of the buns onto each slider, pressing gently to secure.

            Bake the Sliders: Place the assembled sliders on a baking sheet and cover with aluminum foil. Bake in the preheated oven for about 10 minutes, then remove the foil and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

              Serve: Remove from the oven and let cool slightly. Garnish with chopped chives before serving.
