8 oz elbow macaroni

2 cups fresh broccoli florets

4 tablespoons unsalted butter

1/4 cup all-purpose flour

2 cups whole milk

2 cups sharp cheddar cheese, grated

1 cup mozzarella cheese, grated

1 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon Dijon mustard

Salt and pepper to taste

1/2 cup breadcrumbs (optional, for topping)

1 tablespoon olive oil (optional, for topping)

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package directions until al dente. Add the broccoli florets during the last 3 minutes of cooking. Drain and set aside.

    Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Stir in the flour, whisking continuously for about 2 minutes until the mixture is bubbly and golden.

      Add Milk: Gradually whisk in the whole milk, ensuring there are no lumps. Continue to cook and stir for about 5-7 minutes until the sauce thickens.

        Incorporate Cheese and Spices: Remove the pot from the heat and stir in the grated cheddar and mozzarella until melted and smooth. Add garlic powder, onion powder, and Dijon mustard. Season with salt and pepper to taste.

          Combine Pasta and Cheese Sauce: Add the drained pasta and broccoli to the cheese sauce, stirring gently to coat everything evenly.

            Prepare for Baking: (Optional) If you like a crunchy topping, preheat your oven to 350°F (175°C). In a bowl, mix the breadcrumbs with olive oil until moistened. Spread the mac and cheese into a greased 9x13 inch baking dish and sprinkle the breadcrumb mixture evenly over the top.
