4 cups fresh broccoli florets

1 cup cooked quinoa (or rice)

1 ½ cups sharp cheddar cheese, shredded

1 cup sour cream

½ cup milk

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup breadcrumbs (panko recommended)

¼ cup grated Parmesan cheese

Salt and pepper to taste

2 tablespoons olive oil

Optional: 1/2 cup chopped cooked bacon or turkey bacon

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.

    Blanch the Broccoli: In a large pot of boiling water, add the broccoli florets and blanch for 2-3 minutes until bright green and slightly tender. Drain and shock in ice water to stop the cooking process, then drain again and set aside.

      Mix the Sauce: In a large mixing bowl, combine the sour cream, milk, Dijon mustard, garlic powder, onion powder, salt, and pepper. Mix well until smooth.

        Combine Ingredients: To the sauce, add the cooked quinoa (or rice), 1 cup of shredded cheddar cheese, and the blanched broccoli. If you’re using bacon, add it here as well. Stir gently until everything is evenly coated.

          Transfer to Baking Dish: Pour the mixture into the greased baking dish, spreading it out into an even layer.

            Prepare Topping: In a small bowl, combine the breadcrumbs, remaining ½ cup cheddar cheese, grated Parmesan cheese, olive oil, and a pinch of salt and pepper. Mix together until the breadcrumbs are well-coated.

              Add Topping: Sprinkle the breadcrumb mixture evenly over the broccoli and cheese mixture in the baking dish.

                Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the casserole is bubbling.

                  Rest and Serve: Once baked, let it cool for about 5-10 minutes before serving. This allows the sauce to set a little.
