1 cup cherry tomatoes, halved

1 cup shredded carrots

½ cup sunflower seeds (lightly toasted)

½ cup dried cranberries

½ cup Greek yogurt (plain)

2 tablespoons mayonnaise

1 tablespoon apple cider vinegar

1 tablespoon honey

1 teaspoon garlic powder

Instructions
 

Start by preparing the broccoli: Blanch the broccoli florets in boiling water for 2 minutes, then transfer them immediately to an ice bath to maintain their bright green color and crunch. Drain and set aside.

    In a large mixing bowl, combine the blanched broccoli, halved cherry tomatoes, chopped red onion, shredded carrots, sunflower seeds, and dried cranberries.

      In a separate small bowl, whisk together the Greek yogurt, mayonnaise, apple cider vinegar, honey, garlic powder, salt, and pepper until smooth and creamy. Taste and adjust seasoning if desired.

        Pour the creamy dressing over the salad mixture and toss gently until all ingredients are well coated.
