4 large russet potatoes

1 cup broccoli florets, steamed

1 cup sharp cheddar cheese, shredded

1/2 cup sour cream

1/4 cup milk

2 tablespoons butter, softened

1/2 teaspoon garlic powder

Salt and pepper to taste

2 green onions, chopped (for garnish)

Additional cheddar cheese for topping

Instructions
 

Preheat your oven to 400°F (200°C).

    Wash the russet potatoes thoroughly and pierce them several times with a fork. Place them directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a knife.

      Once the potatoes are cooked, remove them from the oven and allow them to cool slightly until they are manageable to handle.

        Cut each potato in half lengthwise. Carefully scoop out the insides into a mixing bowl, leaving a small border of potato flesh to hold the shape.

          To the bowl with the potato flesh, add the steamed broccoli, shredded cheddar cheese (reserving a handful for topping), sour cream, milk, butter, garlic powder, salt, and pepper. Mash the mixture until well combined and creamy.

            Spoon the broccoli and cheddar filling back into the potato skins, mounding it slightly on top.

              Place the stuffed potatoes on a baking sheet. Top each with additional shredded cheddar cheese.

                Return the stuffed potatoes to the oven and bake for another 15-20 minutes, or until the cheese is melted and bubbly, and the potatoes are heated through.

                  Once done, remove from the oven and let cool for a few minutes before serving.

                    - Garnish with chopped green onions for a fresh flavor and serve hot!
